Navsari: Ajay’s Takeaway Food, a chain of Quick Service Restaurants (QSR), is spreading over places, literally built on a philosophy of serving high-quality food at affordable prices, ensuring it is accessible to everyone. This fast-growing food chain from Navsari a city in Gujarat is now preparing to expand nationally.

Since starting its first outlet in Navsari in 2014, Ajay’s has achieved remarkable success, but the journey has had its fair share of ups and downs.

“We launched our first outlet in 2012, but it was not branded as Ajay’s. The outlet was doing very well, but the second one failed miserably. The failure got us thinking. We realized successful businesses have their brands, have a niche, and offer something different. We also used the setback to identify the gap in fast food offerings. We felt fast-food chains operated by MNCs were not affordable for a large section of the society and realized that offering branded and hygienic food at reasonable prices was an opportunity. It was challenging; still, we thought of going ahead with our plans, and this is how Ajay’s was born in August 2014,” says Ajay Solanki, the founder of Ajay’s, which is named after him and his elder brother Jaideep, the co-founder.

The unwavering commitment to quality and hygiene and strategy to keep prices affordable and by 2020, the number of Ajay’s outlets expanded to 21, including its ownstores and franchisee outlets. While things were going great, and Ajay’s was working out plans for its next phase of growth, no one was prepared for the Covid-19 pandemic. Like most businesses, Ajay’s too bore the brunt of the pandemic, and from 21 outlets, the number fell to 13 within two months of the nationwide lockdown. Eight outlets simply shuttered.“

It was a big blow. Our outlets nearly halved in that challenging period, but we didn’t lose hope. We knew that we had the right combination of quality and pricing. We had faith in our model, and instead of looking back, we decided to focus on the future,” says Jaideep, who is a mechanical engineer and MBA by qualification.

Ajay’s adopted a multi-pronged approach to scale up operations. It reduced the entry barriers with zero franchising fees and also scrapped the 5% royalty on sales. The chain started tapping youngsters, who it feels are willing to work harder, for franchisee outlets. Today, more than 75% of its franchisee outlets are run by entrepreneurs who are below 35 years, and the rest are in the 35-40 age group. Ajay’s also ushered in standardization of products to ensure customers got the same food taste and experience irrespective of the outlet’s location. These measures also helped reduce fixed costs, improving profitability. It enhanced the use of technology in operations, leading to better efficiencies, and also adopted the master franchisee model to scale up fast.

The result is incredible growth in the last 18 months. From 13, the number of Ajay’s outlets touched 97 on 16th December 21. In a way, Ajay’s is an apt success story for growth amidst the Pandemic. This made Ajay’s become a household name in Navsari, Valsad, Surat, Bharuch, and Vadodara, in fact, the entire South Gujarat where it has an extensive presence. It opened its first outlet in Vadodara in August and has reached 16 already. It expects to launch in Ahmedabad by April or May, followed by Rajkot. It is simultaneously planning to launch in Maharashtra and subsequently in other states.

“When we started the first outlet, we had not imagined we would have 97 outlets so early. Our focus on taste, quality, and affordability and our commitment to serving food that is good has helped us reach this milestone. We are thankful to our customers for their love and support,” says Jaideep, adding, “Looking back at the journey so far, we firmly believe this is just the beginning for Ajay’s.”

Starting from a single outlet in Navsari city in 2014, the chain has expanded at an incredible pace in the last year and a half.

In 2013, the elder sibling, Jay, who had spent over 12 years in the corporate world, joined Ajay to take it to new heights. Even though the food business in Pune was doing well, the family decided to shift to Navsari, their native place, in 2012. The first restaurant in Navsari that started in December 2012 was Chowpati Fast Food, and not Ajay’s Takeaway Food. Within 6 months, they started another outlet of Chowpati Fast Food, and in the next 6 months, it was a super failure. It was the time to introspect and it was the time when Ajay’s Takeaway Food, as we know it today, was born in August 2014 with the first outlet in Navsari. The range of burgers, pizzas, and coffees the outlet sold became hugely popular among customers. The number of Ajay’s Takeaway Food outlets soon grew to three, and the first franchisee outlet of Ajay’s was opened in Surat in 2016.

By March 2020, the number of Ajay’s outlets crossed 21, but the Covid-19 pandemic did him them severely. From 21 outlets on March 20, the pandemic took away 8 outlets. With 13 outlets on June 20, they decided to make a drastic change in the way they operated and appointed Franchise. The franchise model was revised, franchise fees were abolished, and even royalty was now not charged. Operations at outlets were more standardized, and technology was now included to have smooth operations. They completely focused on how to make the franchise more profitable.

The number of outlets is now about to cross the century mark. Today, Ajay’s outlets are present in nearly all places in Navsari, Surat, Valsad, Bharuch, and other places in the south Gujarat region. With the trusted franchise model, they also entered the Central Gujarat territory in August 2021. As on 31st October 21, the Vadodara Territory has 14 operational outlets in just 3 months.

It is 5 pm, you finally have managed to take out time to treat yourself today. You walk into a café, the aroma of coffee grounds hit your olfactory glands, passing down relief and calming signals to your brain, and everything around you seems to pause for a while. At this moment, all you need is a cup of coffee and a couple of things to daydream about. You order one and eagerly wait for it to arrive. Smelling it before drinking, is an old tradition.

Now it is time to have that first sip, the one that is going to change everything. Right before you are about to take one you seem to forget what coffee tastes like, but as soon as you let those droplets of the coffee pass down your throat, your judgmental mind seems to start comparing it instantly to your version of a perfect coffee. And when it doesn’t meet your expectations, only a coffee lover would know much even a single sip of coffee can affect your mood. 

Instantly from a hyped-up child, you become a quiet old man. Ironically, in the beginning, you were to have a coffee because you were excited, now that you are heartbroken, you still expect coffee to improve your mood. And even if a cup of coffee is responsible for ruining your frame of mind, you still require one to make it better. The relationship between coffee and coffee lovers has been complicated for decades now. The most frustrating fact is when the cup of coffee you ordered costs you a handsome amount. 

Being a resident of Surat, you often hear about plenty of new places and cafes now and then. You tend to visit at least one food place every week, but then some outlets have a special place in your heart or should I say on your tongue? If you are craving a food item, you would only visit that particular place.

And once that diner has captured its position in your heart no matter how much anyone insists you try out any other, you straight away deny it. For me, it has been the same. And Ajay’s Coffee has not only succeeded in grabbing its seat as the best coffee place for me but has also managed to impress with its fast-food range. 

How did I get to know about this place? I live in a city where word gets around fast and even faster when it is about a nice food place. So, one day my friend group decided to visit Ajay’s. As discussed, I expect my coffee to be ideal, and the only concept running through my mind was that it was unmanageable to serve a fabulous coffee at such an economical rate, which was just 20 rupees.

Yes, I was shocked too. I had mentally convinced myself that it would fail to meet up my expectations. After plenty of requests from my friends, I finally decided to take a sip from theirs. And no sooner I was on cloud nine. Perfectly balanced, neither too bitter nor too sweet, full-bodied, foamed coffee passed down my throat; leaving behind an unbeatable high standard that it had now created in my mind.

Not only was I impressed by how well it had been made, but even more by how much I had got it for. If you go to any café, it is unlikely to get yourself a coffee that costs fewer than 180, and as a matter of fact, most of them fail to match your expectations. That day, I realized why I had heard so many people praising Ajay’s Coffee. It has become a permanent resident in my heart. No one has ever since been able to replace it. 

It was not until recently that I finally got the moment to taste its fast-food range. Everyone enjoys a nice burger. But aren’t we all concerned about how embarrassing it would be when you eat it and all the stuffing inside just ends up falling out? It’s worse when you are a super clumsy person.

Take it from me. Personally, I am such a big fan of burgers. But every time we decide to go for one, I end up choosing the simplest available so that it’s not quite fancy; in return making it slimmer and easier to eat. I never preferred trying different flavored burgers for this particular reason. I was under the same impression even for the burgers available at Ajay’s, worried about dropping the stuffing inside, being anxious constantly.

When I finally saw the burgers, let me tell you I have never in my life been so relieved. It was the right-sized burger. The post-jaw-ache seemed to not exist. I wonder how they manage to make every item with such precision. I took my first bite of their tandoori cheeseburger, instantly fell in love with its tangy taste, and even more when gradually the spice started hitting my taste buds.

The fiery flavor enters exactly when your mouth has completely become tart and suddenly your tongue tends to encounter an immense climax. The crispiness of the cutlet was unmatchable while the airy, yeasty buns perfectly balanced it.

And how much would you expect such a perfect burger to cost? 100? Guess what, this was just for 40. Their rates manage to astound me every time just as much as their perfect food manages to. Fun fact: they have had the same rates since 2012.

The fusion of Chinese food and fast food has always been legendary just as their Schezwan cheeseburger is. It had the right amount of pungency. The balance, between both cuisines, had been maintained exceptionally.

There was a perfect combo of ingredients that ignite both your sweet as well as sour taste buds. It became almost impossible for me to choose the better one between the two. But maybe due to my love for tangy flavors, the tandoori burger excelled. It has unquestionably become my favorite burger. 

If you ever have been to Ajay’s you know it is not a fancy high-end cafe, but certainly has an unbeatable vibe. It has succeeded for years now to provide us with the satisfaction that most others have failed. We have all experienced the feeling when we visit a fancy café and end up ordering a few things, but in the end, we return with an empty or half-filled stomach.

I have never walked out of Ajay’s with this feeling. Not to mention, how welcoming and friendly the staff there is. Despite the great rush, they never make you feel that it is chaotic. I have seemed to join the group of people whose favorite hangout place is Ajay’s. 

Their food is awesome, and the coffee is a ‘Sone pe Suhaga’. They have undoubtedly managed to define the word perfection.

Cold Coffee at Its Best: A Sip of Happiness

Cold Coffee … and my taste buds start recollecting the creamy, mouth-filling Lacto, the bittersweet aftertaste of coffee, and if it’s blended with a hint of chocolate, mmmm nothing better … Simply Heaven.

Origin of Cold Coffee

Cold Coffee or Iced coffee, may be different, but their origin can be traced back to early 1840, in Algeria, where it was called Mazagran, The Original Iced Coffee. You guessed it right, it was just coffee syrup with cold water, non-dairy yes very much vegan.

Things evolve based on the circumstances and the environment; Iced Coffee too has its own variations across the globe. In Australia, iced coffee is coffee-flavored milk with a lot of added sugar, which is typically topped with ice cream and whipped cream. Germans have their way of calling it Eiskaffee, coffee with ice cream, and it is mostly with milk and instant coffee. The American love Cold Brew Coffee, yes cold-brewing an iced coffee by soaking ground coffee and chicory with water.

But when it comes to INDIA, we love it our way, coffee without milk is an absolute no. So, what we do is, our Cold Coffee usually consists of instant coffee mixed with cold/frozen milk in a blender, producing a thin, coffee-flavored smoothie. But hold on, there are some intelligent ones and some who like to be creative have their cold coffee Thick, Creamy and yes obviously Cold.

In my search for an INDIAN version of super yummy cold coffee, I have tasted many versions, in Pune, Mumbai, Bangalore, Delhi, and Chennai at Brands like CCD, Barista, and even at local cafes in each locale. But I fall in love with one, I know this would be a one-sided affair, but still, I am all set for it.

During my stay at Surat, I happened to be at a Local Coffee Shop in Surat, rather I was taken there by a local friend who swore by the taste of the Cold Coffee there, he simply put it straight, “Ajay’s ka Cold Coffee nahi piya to kya piya”.

Let me come directly to the LOVE AT FIRST SIP. But before that, I was skeptical, what great shall one give in Rs.20 and my doubt rose a level more when I saw the portion being offered, nothing less than a 200 ml cup. Being a foodie, disbelief is a part and parcel of the bite. I simply took it in my stride, with Rs.20 at stake, there wasn’t anything more to be pondered upon.

The Paper Glass and straw were the speed breakers, yes indeed, they actually slowed me down in my journey of “LOVE AT FIRST SIP”. The branding that was evident on the Paper Glass and even the straw made me waste some time looking at and then appreciating the concern for the environment. What I liked most was the hashtag #ApniColdCoffee. 

Sorry, I got swayed… so the first sip was “Jannat”, the creamy texture, extraordinary mouth fill, perfectly sweetened, just apt bitter, perfect serving temperature, my buds could sense chocolate (but the recipe was not revealed) and most importantly it was thick too. I was like “itne se paise me itna kuch?”. My day was made, I ended up with yet another serving and an unquenched thirst for having one more.

From the day till the date, my Love for Ajay’s cold coffee has been as loyal as Katappa. Many come, many go but Ajay’s Cold Coffee is here to stay, it’s been over 4 years that my Love for Ajay’s Cold Coffee has always grown. Ajay’s Cold Coffee has never betrayed me, her taste, her consistency, and her charm to entice me and rejuvenate me have never gone down. I now feel it has not been a one-sided love story, my coffee loves me equally as I do her. Ajay’s is the best coffee shop in Surat.
